Dinner prep doesn’t get any easier than this one. It just takes 2-3 ingredients, throw them in the slow cooker, and later that day you’ll have the perfect slow cooker taco chicken for bowls, burritos, or of course, tacos!
Slow Cooker Taco Chicken
Ingredients
- 4 chicken breasts frozen or refrigerated
- 16 oz salsa canned or fresh
- 1 tsp cumin (optional)
Instructions
- Add ingredients to slow cooker
- Cook on high for 5 hours if frozen chicken or 4 hours for refrigerated
- Shred chicken with 2 forks and serve
Use Frozen or Refrigerated Chicken
This recipe is so nice because you can use either type of chicken. Not sure what to do with that chicken in the fridge you bought this week? Or have some saved in the freezer? Either way it turns out delicious.
What About Shredding It?
I know, sometimes shredding can be a pain. But rest assured, with this Slow Cooker Taco Chicken, the meat is so tender by the time it’s done cooking that it really just takes seconds.
What Should I Eat with Slow Cooker Taco Chicken?
This is such a versatile recipe, and there are so many ways to use it. These are some of my favs!
- Pair it with this Lime Cilantro Rice to make a burrito bowl base (then add toppings!)
- Make tacos of course – both flour and corn tortillas are delicious with this chicken
- Add it to a salad to make a chicken taco salad (don’t forget the tortilla chips!)
- Make a veggie and chicken burrito
Can I Meal Prep This Recipe?
Absolutely! Slow Cooker Taco Chicken saves and reheats very well. Simply keep in an airtight container in the refrigerator for up to 3-4 days.

I’m glad you asked! I know it can get overwhelming to be excited about a recipe, then have to scroll through a seemingly never-ending life story before finally finding the recipe. Why do You Call Your Recipes “Intuitive Eating Recipes”
No Guilt Nutrition recipes are definitely not the only thing you can eat if you are eating intuitively (really, you can eat anything that you want/feels good to your body!), but I noticed there are way too many diet culture entrenched recipes out there. These recipes give you good food without potentially triggering numbers or diet talk. They also provide a gentle nutrition approach by encouraging balance in your meals without having strict requirements for what that may look like for you as an individual.
