Need a quick veggie side for dinner? Or meal prepping for the week, but want to avoid using the oven? Air fryer roasted vegetables are so quick to make and have that delicious caramelized flavor.
Air Fryer Roasted Vegetables
Equipment
- 1 Air Fryer
Ingredients
- 3 heaping cups assorted vegetables cut into 1.5"-2" pieces (see note 1)
- 1 Tbsp olive oil
- 1 tsp Italian seasoning
- sprinkle of salt see note 2
Instructions
- Preheat air fryer to 400 F. Slice vegetables to 1.5-2" pieces. Add to a medium sized bowl.
- Add oil and Italian seasoning. Sprinkle salt evenly over vegetables so that it doesn't get stuck in the broccoli. Mix until all vegetables are coated.
- When air fryer is heated, add vegetables and cook for 7-10 minutes until you can piece a fork through (see note 3). Enjoy!
Notes
- Try using brussels sprouts, cauliflower, broccoli, carrots, red onion, zucchini, etc…Â
- Make sure to sprinkle salt evenly over the vegetables. The salt can tend to stick in the broccoli if it’s not spread evenly.
- If you’re including broccoli, this crisps quicker than other vegetables and will be ready around the 7 minute mark.Â
Air Fryer Roasted Vegetables for a Quick Side Dish
I love a quick and convenient veggie side! It makes adding nutrients and fiber so simple. Salad kits and steamtable frozen bags of veggies are up there in my favorites, but these Air Fryer Roasted Vegetables taste the best IMO and only take 15 minutes to make. The great thing is they can cook in the air fryer while you’re making the main dish.
Roasting veggies adds a caramelizing flavor that creates a soft and less bitter (almost sweet) taste. You can roast pretty much any vegetable, but you’ll notice I chose some of the naturally more firm vegetables which are wonderful roasted.

4 simple ingredients is all you need for this quick side dish.
Assorted Vegetables: Most veggies work well for this! The ones pictures are what I usually use. Brussels sprouts and cauliflower soften the best in the air fryer. The carrots stay slightly firm (which I find satisfying). The broccoli tends to get crispy faster because of the tops, so make sure to pull them out at the 7 minute mark if you’re using these.
Oil: We need to oil to create the caramelized roasted veggie effect! Olive oil, avocado oil, or any other neutral oil works well.
Italian Seasoning: This isn’t necessary, but I do feel it adds a great flavor to the vegetables. You could also sprinkle in other seasoning instead like garlic powder, basil, or rosemary.
Salt: were just doing a sprinkle so it doesn’t get sucked in to the tops of the broccoli. Make sure to add evenly to the veggies!
Meal Prep Made Easy
Air fryer veggies are a great meal element to prep for the week. You can add them to the side of any lunch or dinner and they reheat well! It’s also much quicker than traditional oven roasted veggies. This also makes it a cooler option if you don’t want to heat up the house with the oven.
