Air Fryer Roasted Vegetables

A quick and easy veggie side made in the air fryer

Equipment

  • 1 Air Fryer

Ingredients

  • 3 heaping cups assorted vegetables cut into 1.5"-2" pieces (see note 1)
  • 1 Tbsp olive oil
  • 1 tsp Italian seasoning
  • sprinkle of salt see note 2

Instructions

  • Preheat air fryer to 400 F. Slice vegetables to 1.5-2" pieces. Add to a medium sized bowl.
  • Add oil and Italian seasoning. Sprinkle salt evenly over vegetables so that it doesn't get stuck in the broccoli. Mix until all vegetables are coated.
  • When air fryer is heated, add vegetables and cook for 7-10 minutes until you can piece a fork through (see note 3). Enjoy!

Notes

  1. Try using brussels sprouts, cauliflower, broccoli, carrots, red onion, zucchini, etc... 
  2. Make sure to sprinkle salt evenly over the vegetables. The salt can tend to stick in the broccoli if it's not spread evenly.
  3. If you're including broccoli, this crisps quicker than other vegetables and will be ready around the 7 minute mark.
