Peanut Butter Date
Ingredients
- 12 Medjool dates pitted
- 1/4 cup peanut butter
- 1/3 cup mini chocolate chips
- 1 tsp neutral oil
Instructions
- Slice the dates open lengthwise and open
- Fill each date with about 1 tsp of peanut butter
- Use about 2 Tbsp mini chocolate chips to sprinkle on top of the peanut butter
- If desired, make melted chocolate to drizzle: Add remaining chocolate chips (about 1/4 cup) to a mug with oil and microwave for 30 seconds. Stir well until all the chocolate is melted and drizzle over the dates. Enjoy immediately or refrigerate for about 20 minutes until chocolate solidifies.
5 Minute Sweet & Salty Snack

Peanut butter dates have been compared to a Snickers bar. And I just have to say that a Snickers bar is a Snickers bar and a peanut butter date is just that. If a Snickers is what you’re wanting, go for that! But if you’re looking for a quick snack, these peanut butter dates do have similar sweet and peanut butter salty attributes to them.
Ingredients in Peanut Butter Date
Medjool Dates: These plump, almost juicy (but not because they’re dried) dates are great for this recipe. You can buy them pitted or remove the pits yourself. Peanut Butter: Really any type of peanut butter works well here. A more “drizzly” peanut butter you have to stir will be a bit softer and may lack some structure in the date, but tastes just as good IMO.
Mini Chocolate Chips: I love the mini ones since there’s room to sprinkle several of them, but you can also use regular size chocolate chips or chop up a chocolate bar
Oil: A neutral oil (canola, avocado, etc…) is essential for getting the perfect melty chocolate on top!
An Energy Boosting Snack
If you need a quick pick-me-up during the day, these peanut butter dates are great. The dates offer carbs and fiber, the peanut butter offers protein and fat, and the chocolate offers carbs and more satisfaction!
Storing Peanut Butter Dates
You can store these in the fridge for 2-3 days in an airtight container. I love making them ahead of time and using them for snacks throughout a couple of days!
