Southwest Quinoa Salad

Ingredients

  • 2 cup dry quinoa tri-color, rinsed
  • 1 can black beans rinsed and drained
  • 1 red bell pepper diced
  • 1 orange bell pepper diced
  • 1/2 cup frozen corn thawed
  • 1 medium avocado cubed
  • 1/3 cup cilantro chopped

Dressing

  • 1/2 cup olive oil
  • 1/4 cup fresh lime juice juice of about 2 limes
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 Tbsp minced garlic

Instructions

  • 1. Rinse quinoa in a sieve. Boil 4 cups of water in a large pot and add quinoa. Turn heat down and cover to simmer. Cook for about 10 minutes until the quinoa has "popped" or "sprouted". Let quinoa cool.
  • Make dressing by mixing olive oil, lime juice, salt, pepper, and garlic.
  • In a large bowl add cooked quinoa, black beans, bell pepper, corn, avocado, cilantro, and dressing. Mix and enjoy!
