Sauteed Chickpea Pita

Warm pita with crispy, seasoned chickpeas, topped with crunchy veggies, tzaziki, and feta

Ingredients

  • 15 oz can chickpeas drained and rinsed
  • 2 Tbsp olive oil
  • 1 tsp turmeric
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • salt + pepper to taste
  • 2 pieces pita bread
  • 1/2 c cherry tomatoes halved
  • 1/2 cup cucumber sliced
  • 1/4 cup Tzatziki sauce premade
  • 1/4 cup kalamata olives
  • 1/4 cup feta

Instructions

  • Heat medium pan to medium heat and add oil. Pat chickpeas dry and add to pan. Cook for 4-5 minutes until browned.
  • Add turmeric, chili powder, cumin, salt, and pepper. Stir and cook for another 4-5 minutes while continuing to stir.
  • Heat pitas and assemble by adding seasoned chickpeas, tomatoes, cucumber, Tzatziki, kalamata olives, and feta. Enjoy!
