Sauteed Chickpea Pita
Warm pita with crispy, seasoned chickpeas, topped with crunchy veggies, tzaziki, and feta

- 15 oz can chickpeas drained and rinsed
- 2 Tbsp olive oil
- 1 tsp turmeric
- 1 tsp chili powder
- 1/2 tsp cumin
- salt + pepper to taste
- 2 pieces pita bread
- 1/2 c cherry tomatoes halved
- 1/2 cup cucumber sliced
- 1/4 cup Tzatziki sauce premade
- 1/4 cup kalamata olives
- 1/4 cup feta
Heat medium pan to medium heat and add oil. Pat chickpeas dry and add to pan. Cook for 4-5 minutes until browned.
Add turmeric, chili powder, cumin, salt, and pepper. Stir and cook for another 4-5 minutes while continuing to stir.
Heat pitas and assemble by adding seasoned chickpeas, tomatoes, cucumber, Tzatziki, kalamata olives, and feta. Enjoy!
