Mediterranean Chicken
Tender and flavorful chicken and veggies with Mediterranean flavors

- 1/2 onion quartered and sliced
- 3 chicken breasts cut lengthwise and sliced into thirds creating longer thin pieces about 1.5 inches thick
- 1/3 c olive oil
- 1 Tbsp red wine vinegar
- 2 Tbsp lemon juice
- 1 Tbsp minced garlic
- 1 tsp oregano
- 1/2 tsp salt
- 2 red or orange bell peppers sliced
- 1 c cherry tomatoes halved
- 1/2 c kalamata olives
- 1/2 c crumbled feta
Preheat oven to 350
Add onion, chicken, olive oil, add red wine vinegar, lemon juice, garlic, oregano, salt to a bowl. Mix until chicken is coated and add to the pan.
Add bell pepper, tomatoes, and olives to the pan. Bake for 50-55 minutes or until chicken has reached 165 degrees internally
Top with feta and enjoy!
