Chimichurri Salmon

Delicious oven baked salmon with chimichurri sauce

Ingredients

  • 1 cup parsley
  • 1.5 cup cilantro
  • 1 shallot
  • 1.5 Tbsp garlic, minced
  • 3/4 cup olive oil
  • 1.5 Tbsp red wine vinegar
  • 1 tsp oregano
  • 1/4 tsp salt
  • 1/2 tsp ground pepper optional
  • 1/4 tsp red pepper flakes optional
  • 4 salmon fillets, thawed about 4 oz each

Instructions

  • Preheat oven to 400°. Make chimichurri sauce by blending all ingredients (except salmon) until thoroughly mixed
  • Place salmon fillets on non stick pan and add 1-2 Tbsp of chimichurri sauce per fillet. Bake for 13-15 minutes or until you start to see white on top of the fish. The internal temperature should reach at least 145°
  • If desired, add more fresh chimichurri sauce to salmon once it's cooked and serve
