Chimichurri Salmon
Delicious oven baked salmon with chimichurri sauce

- 1 cup parsley
- 1.5 cup cilantro
- 1 shallot
- 1.5 Tbsp garlic, minced
- 3/4 cup olive oil
- 1.5 Tbsp red wine vinegar
- 1 tsp oregano
- 1/4 tsp salt
- 1/2 tsp ground pepper optional
- 1/4 tsp red pepper flakes optional
- 4 salmon fillets, thawed about 4 oz each
Preheat oven to 400°. Make chimichurri sauce by blending all ingredients (except salmon) until thoroughly mixed
Place salmon fillets on non stick pan and add 1-2 Tbsp of chimichurri sauce per fillet. Bake for 13-15 minutes or until you start to see white on top of the fish. The internal temperature should reach at least 145°
If desired, add more fresh chimichurri sauce to salmon once it's cooked and serve
