Sauteed Chickpea Pita

Sauteed Chickpea Pita

Ingredients

  • 15 oz can chickpeas drained and rinsed
  • 2 Tbsp olive oil
  • 1 tsp turmeric
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • salt + pepper to taste
  • 2 pieces pita bread
  • 1/2 c cherry tomatoes halved
  • 1/2 cup cucumber sliced
  • 1/4 cup Tzatziki sauce premade
  • 1/4 cup kalamata olives
  • 1/4 cup feta

Instructions

  • Heat medium pan to medium heat and add oil. Pat chickpeas dry and add to pan. Cook for 4-5 minutes until browned.
  • Add turmeric, chili powder, cumin, salt, and pepper. Stir and cook for another 4-5 minutes while continuing to stir.
  • Heat pitas and assemble by adding seasoned chickpeas, tomatoes, cucumber, Tzatziki, kalamata olives, and feta. Enjoy!

All of the seasonings and toppings create an interplay of complimentary flavors here. And unlike some time consuming recipes, it can be put together on a whim!

These sauteed chickpeas are very similar to roasted chickpeas made in the oven or air fryer, but they cook faster sauteed. That is the main difference here! No waiting 15 minutes for an appliance to pre-heat before starting to make.

Chickpeas: The chickpeas (or garbanzo beans) are crucial. Make sure to rinse and pat dry before adding to the pan so they crisp up!

Oil: Also essential to get the crispiness we’re looking for.

Seasonings: The turmeric, chili powder, cumin, salt, and pepper, add a delicious taste to the chickpeas!

Pita: Choose whichever pita you like best, but make sure to warm it before enjoying

Veggies: Cucumber and cherry tomatoes add crunch to this dish that we love

Tzatziki: To make this recipe quick, we’re using a premade store bought tzatziki sauce. La Terra Fina brand is great!

Kalamata Olives: This topping is one of my favorite pieces of this meal. It adds a salty, tangy flavor.

Feta: Can’t forget to top it all with some creamy, crumbly feta! You can either get the pre-crumbled container or if you have a block crumble it yourself.

This Sauteed Chickpea Pita has all of the components we’re looking for in a filling and satisfying meal. We have strong sources of carbohydrates, protein, fat, and fiber. And we’ve included elements to add varying textures and taste to increase satisfaction! You can of course always add other elements to the meal as a side for more variety and energy.

Though I do think the sauteed chickpeas are best eaten after cooked, you can still prep ahead of time for a delicious lunch option! Simply heat the chickpeas and pita, then assemble toppings.
