Equipment

  • 1 9×13 pan

Ingredients

  • 1/2 onion quartered and sliced
  • 3 chicken breasts cut lengthwise and sliced into thirds creating longer thin pieces about 1.5 inches thick
  • 1/3 c olive oil
  • 1 Tbsp red wine vinegar
  • 2 Tbsp lemon juice
  • 1 Tbsp minced garlic
  • 1 tsp oregano
  • 1/2 tsp salt
  • 2 red or orange bell peppers sliced
  • 1 c cherry tomatoes halved
  • 1/2 c kalamata olives
  • 1/2 c crumbled feta

Instructions

  • Preheat oven to 350
  • Add onion, chicken, olive oil, add red wine vinegar, lemon juice, garlic, oregano, salt to a bowl. Mix until chicken is coated and add to the pan.
  • Add bell pepper, tomatoes, and olives to the pan. Bake for 50-55 minutes or until chicken has reached 165 degrees internally
  • Top with feta and enjoy!

Though this recipe isn’t a 30 minutes or less recipe, it still does have that easy, throw together quality. Just add the chicken and flavoring for the chicken in a bowl, add the other veggies to the pan, and bake! After everything is in the pan it’s a very hands-off recipe.

Chicken Breast: Make sure to cut lengthwise, then into about 3 strips per breast. This ensures the cook time will be accurate, but always check the internal temperature too.

Flavoring Ingredients: The olive oil, red wine vinegar, lemon juice, garlic, salt, and oregano are all essential when it comes to giving this chicken its’ Mediterranean flavor!

Veggies: bell peppers, cherry tomatoes, and can’t forget the kalamata olives!

Feta: It’s all topped with feta cheese to tie in the fresh, lemon-y flavors.

We have our protein, fat, and fiber/vegetables in this Mediterranean Chicken, but ideally we’ll add some carbohydrates to the meal as well. Rice, potatoes, and pasta all work well! If you’re wanting to make it quick, you could opt for the microwave bags of rice or try these Air Fryer Red Potatoes. You can also add another veggie side or salad if desired, though there are a significant amount of vegetables in the recipe already.

When baking, the chicken and vegetables will release extra liquid into the pan. This is normal and actually helps to keep the chicken so juicy and tender while cooking! You can drain it out before enjoying or simply add the chicken and vegetables to your plate while leaving the liquid in the pan. Use caution not to spill the liquid when taking it out of the oven!

Yes! This Mediterranean Chicken recipe keeps well for 3-4 days in the refrigerator (in an airtight container). Add pasta or rice on the side for some carbohydrates and your lunch is ready to go!
